Why I bake on Wednesdays

Wednesday pickup started because it was the one day I could protect for the oven. Friends asked if they could count on bread each week, and that rhythm became Lindsey's Market.

There's something grounding about a fixed bake day. The starter gets fed on a schedule. The dough rests overnight. Neighbors know when to stop by. It's not the fastest way to run a bakery — but it's the way that fits real life, real heat, and real community.
